Peanut Butter Cup Cookies

October has always been my favorite month of the year not just because my birthday is on the 16th (wink, wink) but because Halloween is one of my favorite holidays. My Halloweens were a little different growing up though. My sister and I would still dress up in costumes we’d wear to school as my mom was obssessed with making sure we had the best looking ones in our respective classes. However, since she was very overprotective, we were not allowed to go trick or treating. (Trick or treating is also not as fun when you live in an apartment building full of people who won’t open their doors). But that didn’t mean we didn’t get to indulge in Halloween treats. See to compensate, my mom bought us TONS and I mean TONS (cuz she goes big with everything she does) Halloween candy. And she got us all the good stuff too, too much for me to even get into in this blog post and so much that we got sick of it after a day or two.
Mini Reese’s Peanut Butter Cups were always in our Jack-O-Lanterns. And I was brought back to those simple times when I took my first bite of this cookie. The recipe comes from Real Simple Magazine (aka my new favorite even though it’s overpriced) and has chunks of Reese’s throughout the entire batter. The batter came together really quickly AFTER unwrapping and chopping 12 ounces of mini reeses’s (which was a lot). My hubbie (and helpful sous chef) helped unwrap while I chopped…thanks babe.
If you like Reese’s Peanut Butter Cups these cookies are for you. Think of these as a crispy, baked version of the popular treat. Following are a few things to consider before making these cookies:
- Keep your peanut butter cups cold to prevent them from melting when chopping them.
- I used the mini kind as opposed to the large ones as the center of the cups tend to come apart easily.
- After putting the dough together, refridgerate the dough for an hour of so as it will be quite soft when you are done folding in the peanut butter cups and these will keep the cookies from spreading too much while baking.

Peanut Butter Cup Cookies
Ingredients:
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon kosher salt
1/2 cup (1 stick) unsalted butter, at room temperature
3/4 cup dark brown sugar
1/2 cup granulated sugar
1 large egg
1 teaspoon pure vanilla extract
1 12-ounce package small peanut butter cups, coarsely choppedDirections:
Heat oven to 375° F. Line 2 baking sheets with parchment paper. In a large bowl, whisk together the flour, baking soda, and salt.
Using an electric mixer, beat the butter and sugars until creamy. Add the egg and vanilla and beat to combine. Gradually add the flour mixture, mixing until just incorporated. Fold in the peanut butter cups.
Drop tablespoon-size mounds of dough 2 inches apart onto the prepared baking sheets. Bake until light brown around the edges, 12 to 15 minutes. Transfer to a baking rack to cool.

These peanut butter cookies sound delightful! We went trick-or-treating every year… and my older brother and I delivered papers in our neighborhood so everyone knew us. We would come home with bags full of candy! We'd sort everything out on the dining room table and see which type of candy was most popular… it was always peanut butter cups!

I love Reese's Peanut Butter Cups – they're probably my favorite candy.I hear you about trick or treating in an apartment building – when we lived in Manhattan it was really weird to take the kids around the floors because so few people would actually hand out candy.Thankfully they're too young to remember that!

I just bought some peanut butter cups with Halloween faces incarved in them. They're really cute … and delicious! I never celebrated Halloween as a kid. At the time, Halloween was only celebrated in the States. Last year was my first year! Loved it!
