Cheesecake Ice Cream

What could be better to enjoy during this holiday weekend than a good bowl of ice cream (or an ice cream cone…with rainbow sprinkles…)? 

Enjoying HOMEMADE ice cream is the answer!

If you don’t have an ice cream maker, go out and buy one today so that you can enjoy this treat during your 4th of July BBQs.  They are easy to find and with all the sales going on this weekend, I’m sure a good deal is just around the corner.

And when you buy one, make THIS ice cream.  Sure it seems plain old vanilla ice cream in the picture (not that there’s nothing wrong with vanilla…it’s my FAV).  But when you put it in your mouth, it will taste like the absolute most perfect cheesecake – tangy and creamy and silky and flavored with lemon.  YUM!  It doesn’t get better than this.  It also couldn’t be easier to make (as you can see below, the recipe is only three sentences long).

So do yourself a favor, make this ice cream and have an awesome 4th of July :)

Cheesecake Ice Cream

Adapted From: The Perfect Scoop
By: David Lebovitz

Ingredients:

8 ounces cream cheese
1 lemon
1 cup sour cream
1/2 cup half-and-half
2/3 cup sugar
Pinch of salt

Directions:

Cut the cream cheese into small pieces. Zest the lemon directly into a blender or food professor, then add the cream cheese, sour cream, half-and-half, sugar and salt and puree until smooth.

Chill the mixture thoroughly in the refrigerator, then freeze it in your ice cream maker according to the manufacturer's instructions.

    I need to make that! Whenever I find myself at Coldstone, I get the cheesecake ice cream (with pie crust, raspberries, and hot fudge). I don't know why I haven't thought of making it at home yet. I even have that book!

    Just before I started reading your post, I was standing in the kitchen over the sink enjoying spoonfuls of vanills ice cream (my fav too).We do own an ice cream maker and often make fruit based ice creams-actually, my husband does…I just enjoy it. Your cheesecake ice cream looks absolutely divine. I think I have just been inspired.

    could not agree with you more. homemade ice is the best. and you know i have been sick for a couple weeks with bad cold and ear infection and i have to stay away from dairy. you can imagine how much that is killing me since my diet of choice in summer is ice cream–especially during this heatwave.

    I am so glad you posted this. This weekend, I bought a liter of strawberry cheesecake ice cream, and yesterday discovered that the 3rd listed ingredient was partially hydrog. vegetable oil. Ew! I cannot wait to make my own…probably with cookie crumbles in it! Yummy!
