Sweet Melissa Sundays (on Monday) – Toasted Almond Lemon Bars
Just like I’m a cookie lover, I’ve never been known to turn down anything lemon flavored. So I was super excited with this week’s Sweet Melissa Sundays pick – Toasted Almond Lemon Bars by Rebecca of Indecisive Baker.
I mean what’s there not to love about sweet and tart lemon desserts that pop in your mouth and make you feel all warm and fuzzy inside. Although I have never made them myself, I have had my share of lemon bars. So before baking these, I knew these were going to be extra special because they incorporate ground almonds in the crust and the almond extract in the filling.
And special they were. Not only were they a cinch to prepare, but the extra crunch in the shortbread crust and almond flavor in the filling helped balance this treat that some feel can be overly tart. You read my mind! I've been on the lookout for a lemon bar recipe, but I hadn't found a good one yet. This one sounds fabulous! I think the ground almonds will add a special touch/taste.

oh these look fantastic!! i am not one to turn down a lemony treat either. i was never so big on lemon treats but i guess my tastes have matured outside the 'chocolate realm' and these were a delight!They look great!

These look wonderful… I have always been a lemon fan, too. As a kid, lemon meringue pie was always my favorite! I know that I will have to make these… and that they won't last long in my house.
