Just like I’m a cookie lover, I’ve never been known to turn down anything lemon flavored. So I was super excited with this week’s Sweet Melissa Sundays pick – Toasted Almond Lemon Bars by Rebecca of Indecisive Baker.
I mean what’s there not to love about sweet and tart lemon desserts that pop in your mouth and make you feel all warm and fuzzy inside. Although I have never made them myself, I have had my share of lemon bars. So before baking these, I knew these were going to be extra special because they incorporate ground almonds in the crust and the almond extract in the filling.
And special they were. Not only were they a cinch to prepare, but the extra crunch in the shortbread crust and almond flavor in the filling helped balance this treat that some feel can be overly tart.
