Toasted Coconut Lime Cookies for the 100th Post and a Giveaway

When life gives you lemons, forget the lemonade. Switch them for limes, add some coconut and then make these cookies. Given my love of cookies, I thought it would be appropriate to celebrate A Chica Bakes’ 100th post with what has climbed to the top of my favorite cookie list – Toasted Coconut Lime Cookies.
It’s no secret that I love coconut. I especially love big ones like this one – that you have to drink the water out of first and then crack open with your weapon of choice (my grandpa’s was a mashedy) to enjoy the juicy meat inside.

Since I unfortunately couldn’t jet off to an island to get fresh coconut, I went with the sweet flaky stuff from the baking aisle instead for this cookie. But I toasted it to bring out the coconut flavor and make it extra crunchy. Word to the wise – watch this stuff when you have it in the oven as it can go from beautifully golden to a burnt mess in a hot second. Trust me on this…I know.

But let’s not forget about the lime – the wonderful co-star. There is a little juice in here but the zest is where it’s at. Leave the white pith behind and you’ll be off the citrus heaven. Well, maybe not heaven but you’ll have a pretty darn good tasting cookie.

Oh and my favorite cocktail – Champagne with a splash of Pomegranate Juice – because what girl doesn’t like a pink drink with bubbles.
Toasted Coconut Lime Cookies
Ingredients:
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 sticks (1 cup) butter, room temperature
1 1/2 cups white sugar
1 large egg
1/2 teaspoon vanilla extract
Zest of one large lime
3 tbsp lime juice
3/4 cup flaked sweetened coconutDirections:
Preheat oven to 350 degrees. Line cookie sheets with parchment paper or Silpats. In a separate cookie sheet, toast flaked coconut until golden brown, roughly 8-10 minutes.
In a small bowl, whisk together flour, baking soda, baking powder and salt. Set aside. Using a mixer, beat together the butter and sugar until light and fluffy, roughly about 5 minutes. Beat in the egg, vanilla extract, lime juice and lime zest. Mix until well combined. Gradually add in the dry ingredients and toasted coconut. Mix until combined, don’t over mix.
Using a tablespoon or a small ice cream scoop, scoop dough and place balls of dough on prepared cookie sheet. Bake 8 to 10 minutes or until lightly browned. Let stand on cookie sheet two minutes before moving to a cooling rack to cool.

Congrats on hitting the 100 mark with posts. I LOVE your blog. These cookies look amazing coconut and lime is one of my favorite combos. My favorite drink? Hmm its a toss up between a mai tai and a margarita although I did recently discover a pineapple mojito and made it with coconut rum. Oh my oh my is it good!!Shanna

Hello:Do you have any recipes for Dominican coconut sweet (Dulce de coco)?I am Dominican and love coconut. I've been looking for a coconut sweet recipe made with the soft meat of a fresh coconut just like the one in your picture in Hawaii. Eliana, When I read mention your favorite cocktail, you were speaking my language… My favorite cocktail is a Vodka lemon drop made with fresh lemon juice, good quality vodka and Cointreau.Congrats on your 100th post! My favorite cocktail would be a mint mojito. The kind with the real muddled mint and not the syrup. It's so good when made correctly and sans alcohol you can drink it anytime anywhere since it's so refreshing.

I recently achieved that milestone with my blog, but couldn't come up with a creative way to mark the occasion, as you did, so I say, way to go!Those cookies sound immensely satisfying, but since my baking efforts have always been a massive fail, I'll stick to reading the recipe, salivating at the pics, and dreaming that one day, I too can learn to bake! : )

Oh. My. Goodness. These are the BEST cookies I have ever made in my life which is unfortunate because I may gain 10 lbs tonight by eating all 40 cookies I made. I added some white chocolate chips to mine (not too many) and a little bit more untoasted coconut but everything else was exact. I had to force myself to stop eating the dough.
